Mini Waffle Ice Cream Bites
Equipment
- Handmixer or whisk

- Waffle Silicone Mould
Ingredients
- 1/2 egg white
- 70g white sugar
- 30g melted butter
- 70g plain flour
- pinch of salt
- 1/2 tsp vanilla bean paste or vanilla extract
- around 80ml of milk depending on consistency
- Ice cream (any flavor) for the filling
This recipe will make enough batter to fill up the Round Waffle Silicone Mould about 3 times, which would make about 27 mini waffle ice cream sandwiches.
Instructions
- In a bowl, whisk the egg white, sugar, salt, and vanilla until foamy.
- Gradually whisk in the melted butter.
- Add the flour and mix until smooth.
- Add milk until the batter has a runny consistency, so that it easily pours off a spoon.
- Preheat the oven to 175°C (350°F).
- Fill each cavity of the waffle mould with a thin layer of batter. The waffles are going to get very hard, if you fill in too much batter they are going to be hard to eat. I used the teaspoon to transfer a batter.
7. Bake for about 20 minutes, or until golden brown.
8. Let the waffles cool in the mould before removing.
9. Use a small spoon to add ice cream to one waffle and push another waffle on top.
10. Enjoy immediately or freeze for later!
